Market Report
January 3, 2011
January 1st begins new seasons on local fish resources. Some fish will be more available and other fish species will be less available depending on regional and local closures.
Mid Atlantic Striped Bass will be hard to get as new tags are usually not issued until the end of January so they will be difficult to get. But flounder from the mid-Atlantic; North Carolina, as well as, Virginia and Maryland will be open and the quota is much larger this year meaning flounder will be a great menu item choice for at least the next 2 months.
In addition, it looks like rules are changing for grouper and it will become more tight; especially short-trip, American fish. As soon as we get the most recent clarification, we will relay that information to you. In the meantime, we have a good supply of grouper fillet and Short Trip Whole Red and Black grouper landed just before the New Year as boats came in for the holiday.
Also at this time, traditionally, fish from Central and South America tends to become more difficult to get because of their big holiday, 3 Kings Day, on January 6th. All boats are coming in for their markets so we have been trying to buy as much top quality Grouper, Mahi, Corvina and Imported Dotted Snapper and other species as we can over the next 3-4 days to prepare for the drought that we expect to see from the 10th -24th of January.
For the upcoming week, Tuna prices are down slightly, Mahi is stable; Atlantic Salmon (specifically Scottish Salmon) is down slightly, and Swordfish is slightly up.
There should be more availability of shellfish as the weather warms. Stone Crab should be more available (just after the celebration time!) as the air temperature rises. Lobsters are steady and there are bargains on Lobsters, 2 pounds and up, especially on 4-6 lbs at $7.99/lb. There should be plenty of mussels and all other shellfish by mid-week to restock, as reports are that everyone had a huge New Year’s week and many people stayed open on New Year’s Day.
On non-seafood proteins, take advantage of our continuing special on All-Natural, Grass-fed Australian Striploins at $4.99/lb, Painted Hills bone-in Standing Rib Roast, and Marcho Farms 2 & 2 ½ inch, all-natural, hormone-free, hind shanks (the meatier part of the veal shank) at $7.99/lb; each piece averages 14-16 ozs.

This Week’s Feature…
Super-Fresh Itsumo Tuna
We were able to secure an additional shipment of Itsumo Tuna Breadloaf Loins this week out of the Philippines. Tuna has been very tight for the last month and we know that this red, beautiful fish will be great for people trying to pack flavor and lower calories as the Year begins. Itsumo Tuna loins are fully trimmed (bloodline skin removed). These fresh loins are red, firm and full of flavor. This tuna is all natural; NOT smoked, gassed or chemically treated. “Itsumo” tuna from Inland Seafood allows our customers to consistently secure fresh red sushi grade tuna.
