The Atlantic Salmon market has come down a slight bit and we expect further moderation as the weeks go by. We have lowered prices on Scottish Salmon. Unfortunately, there is no really big 13 up fish but we have a nice supply of Sushi 11 to 13 pound fish.

We are also getting some day boat hook and line caught Troll King Salmon out of the inward passage of Alaska, prices have come down quite a bit but they are still expensive. Some of these same fish are destined for the Copper River and by the time they get there, in the beginning of May, not only will they be slightly larger but a whole lot more expensive. Right now they are well under 19 dollars but rumor has it that the Copper River Kings will be over 35 dollar this year.

Seafood, as other proteins, is at a historic high in price. But we have searched the world over to find our customers value. We have great prices that you need to ask your salesperson about:

Baja Redfish that is from the Baja peninsula of Mexico.

King Clip, a great grouper taste-alike from the country of Panama.

Day Boat Lake Pontchartrain Large Drum from Louisiana in the good old USA.

All these fish are well under $8 per pound. They offer everyone a great, moderately priced seafood entrée that can show off a cook’s creativity, as well as, being a great value.

Speaking of moderate, the Alaskan Halibut market is inching downward and we expect to have slightly more moderate pricing by the weekend that will be no longer be insane, but expensive.

The Tuna and Swordfish markets seem to be going in opposite directions; Swordfish slightly decreasing with Tuna rising daily.

Red Snapper from the Gulf, Yellow Tails and Dotted Snapper, have been very, very expensive and we expect that to continue although we have new supply coming in at slightly lower prices. Look to Mutton Snapper as the only real bargain.


On the domestic front, Flounder from VA is a bargain. Alaskan Cod, while slightly more expensive because of air freight, fuel surcharges and the closing of the season outside of state waters, is still a great bargain.

In the beginning of April, we should start seeing more fish show up so we will have some more availability on Grouper out of the Mexican waters, as well as Pompano and Cobia.

Mongchong (Promfret) from Hawaii
Heibi (spearfish) from Hawaii
Columbia River Sturgeon from Oregon
Naigri (Striped Marlin) from Oahu

As the Final Four approaches we have a great selection of appetizers and hors devours that are great for Final Four parties.


Since March Madness is over we have a couple of things we would like to put on this weekend’s report. We have select crab cakes for less than .40 per cake and we have the last of our specials on select cuts of Springer Mountain All Natural Chicken.


We have All Natural Montana Ranch Piedmontese Strip Loins, this weekend only, for $7.59/lb if you buy a full case (55 lbs).

We are also cutting the price of our Marcho Farms All Natural Amish (2 inch) Hind Shank Osso Bucco. Ask your Representative for details!

Lamb prices have taken a big jump and our prices for next week are going to be higher yet again. If you are smart you will buy your lamb, either domestic fresh or New Zealand frozen, this week before the weekend as prices will probably go up another 5-7 % as Easter approaches. We get our lamb every week from that week’s processing, so these cuts will last you through Easter.

In addition, we need pre-orders on Eden Farms 100% Certified Berkshire Black Forest Hams, Honey Glazed Hams and, especially, for the Uncured Hams, because we only bring in what is preordered on that item due to shelf life. Also, it is time to stock up on Eden Farms all natural apple smoked bacon while we have a good inventory!
