Market Report

Today we are receiving a load of Red Grouper in from the Cortez area of Florida along with a deep water Hook and Line boat that brought in a good shot of short-trip Yellowfin Grouper and Golden Tile.

The price of grouper has spiked because of the storms off of the Coast of Mexico and domestic grouper has also gone up. Yellowfin Grouper has a distinctly whiter appearance and for many has a milder, sweeter taste than Red or Black Grouper. This fish should even be perfect for Sashimi as the trip was very short and the fish has bright, cherry-red gills.

We are also expecting good load of Dotted Snapper in from the coastal waters of the Pacific.  Prices are up a little bit but the quality will be exceptional; it is one of the few Snappers that are semi-reasonable at this point. In addition, we have a shipment of day boat Yellowtails out of the Keys that are in-house along with a few Caribbean Red Snapper. We are expecting Genuine American Gulf Red Snappers in next week.

We got a short-trip Halibut boat in yesterday that is stunning quality out of the inward passage of Alaska. We were able to preserve some heads on the fish so we are able to have a little bit of cheeks with this.

There is some Black Bass around, along with a little bit of small Wild Striped Bass. We hope by next week to have larger Striped Bass out of the Northeast. Prices are still very strong but may drop slightly next week.

Mahi is very tight and is expected to only go up in price over the next ten days. This is probably going to be the time of year where availability will be the worst.

We also have a good shot of Wreckfish that hit our docks from yesterday’s unloading off the Carolina Coast. When we land Wreckfish a side benefit we get some Barrel Fish as a by-catch. For those of you who haven’t tried Barrel Fish; it is very similar to Australian Bluenose in appearance and it has a very sweet, mild taste. Wreckfish, of course, has become a favorite in the South and has a great, meaty taste.

We do have some Lake Ponchartrain Drum in from Louisiana but the big news out of Bayou country is we got a nice shipment of Pompano yesterday and more is expected today. Prices are coming down on this fish. For those of you who have not had Pompano lately, it is a great, tasty fish for whole-fish presentation and as a filet in your own special preparations.

Tuna and Swordfish seem to be fairly plentiful and prices are very moderate. We expect that trend to continue until the end of next week when we think prices will start going up because of the full moon.

We have a good supply of Northeastern fish including Haddock, large day boat, hook-and-line Jumbo Cod, Monktails and a few Skatewings on hand along with a small amount of Wolffish coming in from Canada. In addition, we received a small shipment of Dab Flounder that was pre-cut in 4-6 and 6-10 ounce size from the Northeast along with a tiny bit of John Dory, as well as a shipment of Fluke in Rhode Island.

The Salmon market seems to have steadied out for Atlantics, in fact, Scottish have gone up a little bit. Wild Alaskan and Oregon Salmon, on the other hand, are at their prime and we have a good inventory of both Colombia River Kings and Net-and-Troll Kings out of Alaska. Prices are outstanding!

We are receiving daily shipments of Sockeyes in from both Main Bay in Prince William Sound and the famous Copper River. The season is still continuing in that area confounding the experts who have never seen this amount of Sockeyes this late in the Copper River.

Later today we are expecting another shipment of Ketas. Please check out the low price of Ketas, it is something you owe to yourself to try. We are continuing specials this week and next week as we receive shipments almost daily out of Alaska with Sockeyes, Ketas and Kings.  Our company goal is the following:

We have a decent inventory of Lobsters.  It seems as though the shed has begun in the Northeast but the Lobsters are not ready to ship so prices on Hard Shell, Canadian and Maine Lobsters are still expensive.

We just got in a shipment of Domestic Crab meat. We have a good supply of Imported Jumbo lump and Regular lump on hand.  Prices are inching up on imported crab meat while domestic seems to be holding steady.

It’s not a great week for Oysters out of the Pacific Northwest as Kumamotos are in short supply and there is red tide in certain parts of Puget Sound so we have to limit the amount of West Coast Oysters we have on hand. Please check out the good selection of East Coast Oysters and we expect more in later today.

We are beginning to see some Shrimp coming in from the Panhandle and the Carolina Coast. We expect to have U15, 16/20, 26/30 and smaller shrimp on hand by this afternoon. Don’t forget we have a good selection of the Bluefoot peeled and deveined all-natural shrimp along with gallons of peeled Rock Shrimp.

We also were also fortunate enough to get a small shipment of Viking Village day boat Scallops in today. If you haven’t tried these sweet jewels of scallop-essence, this is the real thing. Viking Village boats go out in the morning and return the following morning. This is truly a day boat scallop!

We are continuing to run specials on our All-natural, Hormone-free beef. This week we are again featuring a special on our boneless Ribeye from Painted Hills which is all-natural and hormone-free. By the way, our Painted Hills ribeye is deeply trimmed. In addition we have a good supply of Painted Hills Chuck Flatirons on hand. These make a great bistro steak.

We also received a new shipment of grass-fed, all-natural, hormone-free Australian tenderloins in this week. Check with your salesperson for pricing. We also have a good supply of Montana Ranch tenderloins on hand for the ultimate in taste experience.

This weekend we are celebrating the arrival of the tomato season in the South with the cooperation of Eden Farms, the all-natural 100% Berkshire pork breeders out of Iowa. We are featuring all of their bacons, both sliced and slab and layouts for reduced price. Check with your sales people for the price for this week and next. We can almost taste those BLTs being made.

For the next week we’re running a 10% off sale on all of the Olive Oils that we have. These are really wonderful and unique olive oils from Greece, Italy, the deserts of Spain, as well as pomace oil for cooking and blended oils at 75% Virgin Canola Oil blend. We are also taking 10% off of all of our Tsitalia Olives.

We just received a shipment of all-natural Marcho Farms block-ready veal short loins in yesterday along with some six-bone veal racks. These make excellent grilling items and are wonderful and much lighter tasting than heavier grilling items this time of year.

As a final note, we are starting to see a bumper crop of Porcini mushrooms coming in from the mountains of Oregon and Northern California. We have reduced the price of Porcinis to $19.99/lb.
