This week is when holiday parties really begin in earnest and we have a great selection of fish. Everything seems to be going according to our predictions from last week.
We are seeing a good run of Grouper in right now, so that is something to look at for the next 10 days
We are also having moderate amounts of Tuna and Swordfish coming into our plant this week as boats fish during the full moon (Dec.10th). Swordfish is expensive but the quality is still superb and Tuna is climbing a bit.
Imported Red Snapper is expensive this week but we hope to see prices moderate towards the end of the week as well as availability picking up on Dotted Lane Snapper. Genuine American Reds are actually more plentiful than imports at this point and prices are about where they have been.
Mahi Mahi, because of the full moon in 3 days, will become more expensive. It will probably go up in price but we expect it to fall right after the boats come in from fishing the full moon. Cold water off the coast of Peru and Ecuador is limiting catches to only the boats that are large enough to go out to sea 75 miles offshore.
We are seeing some Wild Striped Bass coming in out of Virginia and North Carolina and it is expensive. We don’t think prices will moderate.
Flounder is starting to come in but it is slightly more expensive than we had predicted. We have a good charge coming in today as we bought a whole trip and the trip limit now is 5,000 lbs. per boat. We do not know the breakdown between medium, large, and jumbo but there will be some for everybody. We know the quality will be superb but prices will be slightly up from what we predicted.
Good news on the Salmon front. We have a good supply of larger whole Atlantic Salmon from the U.S. and Canada, as well as new Scottish Salmon coming in at the end of the week. Because of bad storms in Scotland we have only a limited amount of Scottish fillets and whole fish in house. By next week things should straighten out and there should be plenty of availability. To make up for this we have decided to bring in a lot of Norwegian pre-rigor fillets and we pin-bone it in-house. The quality is superb and the size is very large. We think you will be very pleased with this item and it is the same price as Scottish. We also think we’ll see a lot of Atlantic fillets out of Chile for the next few weeks and they should remain steady, or may even fall, depending on what demand is like.
Another good thing is that we have a good variety of small amounts of fish for holiday specials and special dinners for
your customers including small amounts of Domestic Florida Pompano, Red and Black Day Boat Grouper, South Carolina Wreckfish, Haddock, Cod, Skate, Pollock, and Lake Pontchartrian Drum. We also have plenty of North Georgia-farmed Sturgeon, Redfish, Cobia, Loup de Mer, and Norwegian 10/15 Farmed Halibut.
In addition, we have wonderful quality FAS Halibut.
For this upcoming week we have a good supply of fresh East Coast White Shrimp; it may be the end of the season depending on the weather. We also have Nantucket Bay Scallops, Stones Crabs, and Domestic Crab Meat coming in as well as Down East Maine Peekytoe Crab meat and Lobster Jumbo Lump for the entire week.
We have a good variety of Shellfish including West Coast Oysters and Manila Clams as well as Mediterranean Mussels. In addition, we have a great selection of Oysters from everywhere. Oysters are plentiful and the quality is exceptional coming in and we should see more production out of the East Coast and the Gulf with very good prices.
Now is the time to stock up on Caviar and Smoked Salmon. The great news is that Woodsmoke is back into full production and we have our famous Woodsmoke Provisions Smoked Salmon and Pecan-Smoked Trout back in and you should be able to get all that you want for the holidays.
Another great thing that is happening this week is that we have a good supply of Painted Hills All-Natural Beef coming in today. We have every cut of Beef in good supply with the exception of Boneless Ribeyes. In addition, we ordered forty cases of Standing Rib Roast for the holidays but we were only able to get 10 and those will be first come, first serve for the famous Painted Hills All-Natural, Hormone-free Beef. We are also excited to announce that we are carrying Painted Hill Grass-fed Ground Beef in a 20 lb. case. They are packed 4x5 at a price that is about a dollar less than any of the local grass-fed Beef. It’s the same structure/format as Painted Hills All-Natural Beef except that this is 100% grass-fed. We’ve been a long time user of Painted Hills and they have come to the plate and told us to let them know what we need and they would do everything to fulfill your needs.
In addition, we have wonderful Meats by Linz, which is a first-line, Allen Brothers’ type of Chicago beef house with quality that is as good as, if not superior to, theirs. They do a dry-aged Prime and their portioned Beef is trimmed better than anyone else in the business. When you open the box you can see the grade, and what you see on the side of the box will definitely be what you see when you open the box. It is truly an extraordinary program.
We also have the Portioned Beef from A. Thomas out of northern Kentucky which takes an upper 2/3rd cut and portions it for us to order using Creekstone and other great brands of beef to make a great portion beef.
We will have a good supply of Veal for this season with Marcho Farms and Le Quebecois as well as a great supply of All-Natural, Domestic Lamb, Montana Ranch All-Natural Piedmontese Beef and Strube Ranch Kobe Beef in good numbers for the holidays.
For Fowl, we have the Jurgielewicz Pekin Duck products as well as Springer Mountain Chicken, Palmetto Squab and Poussin and of course a great selection of Magret Duck Breast, Foie Gras, Duck Legs, Duck Fat, and Smoked Duck Breast by the good folks at Sonoma Artisan Foie Gras from Sonoma County, California.
