Market Report

Due to continued bad weather around the world, Farmed Atlantic Salmon still remains an issue. We have been fortunate enough to secure, and fly into our warehouses, ample supply of Norwegian and Scottish Salmon. Unfortunately, between extra airfreight, canceled harvests due to weather issues the market has risen and prices are again up a little bit.




Lobster
should be plentiful and prices have not changed this week. In fact, we have a special on jumbo 5-6, 6-8, and 8-10 Live Lobsters for under $10 per pound. In addition, it is important to order your lobster jumbo lump meat early in the week because processing will be at a minimum this week in Maine.

Tuna remains very tight worldwide. For this week we were fortunate to secure an extra supply of super-fresh Itsumo TunaItsumo Tuna loins are fully trimmed (bloodline skin removed). These fresh loins are red, firm and full of flavor. This tuna is all natural; NOT smoked, gassed or chemically treated.


“Itsumo” tuna from Inland Seafood allows our customers to consistently secure fresh red sushi grade tuna.

We are expected to land a couple of Gulf boats this week for domestic tuna, but they will be expensive.

Another great New Year’s Eve special is our farmed raised halibut from Iceland that is sushi quality and less expensive than the last 8 weeks of the wild Alaskan season! Our Farmed raised Icelandic Halibut is sustainably raised in above ground seaside tanks; these environmentally friendly fish are excellent for all applications.


Because of storms in the Maritime Provinces of Canada, bridges to Mainland Canada were iced over and closed from Prince Edward Island and mussels became a problem. The weather again appears like it may be an issue. To insure that you will have mussels for the New Year’s Eve Holiday, please order these early. We suggest this with all other shellfish, as weather and road conditions in the Northeast and mid-Atlantic look to be problematic in the week ahead.


Fresh crabmeat, both domestic and imported is tight but we hope to have more during the week.

Stone Crab, because of the cold weather will be few and far between. When the atmospheric temperature is below 55 degrees, stone crabs stick to their shell and are not harvested. Unfortunately, this weather has extended all the way to Miami over the last 10 days.

Here are some great menu choices with steady pricing and supply. We should have good supply of Domestic Redfish, North Carolina and Virginia Flounder, Wild Striped Bass, Farmed Belize Cobia, Gulf Red Snapper, ‘Hook & line’ Red Grouper and Black Grouper (*limited supply-order early to insure delivery) and probably what is the last of the season of Georgia Shrimp.


On alternative proteins, we suggest that you order your Magret Breast and Foie Gras early for New Year’s Eve. We sold out last week and demand will be even greater this week; we are buying all that we can get.

All mushrooms are rapidly disappearing with the rains in California. We were able to secure one last shipment before the deluge. Buy them early!




This Week’s Feature…

            Swordfish

We have secured an excellent source of Swordfish that is being caught off the coast of California, halfway to Hawaii! We have contracted with three boat captains to help them move their product back East. Swordfish is an extremely dangerous catch and these artisanal fisheries are all “Hook & Line” caught. We will have fish ranging from 70-300 pounds for the New Year’s Eve celebration. These boats are out for short trips and the bloodlines on their catch are bright red. The prices are dollars below the market price!
