December 22, 2011 – Holiday Special Report – The Land Lover’s Market Report…
We have good information for this weekend and New Year’s Eve weekend on our specialty products and fabulous protein selections at Inland Seafood. Exciting things are coming up for this year and we will keep you informed of all the new developments.
SHOW US THE BEEF AT INLAND
If you haven’t tried our amazing Portioned Beef cuts from A. Thomas Meats in Kentucky or Meats by Linz of Calumet City, Illinois (which we think is at least as good as those Famous Brothers from Chicago), we think you need to start looking at these programs for your menu.
Our A. Thomas portioned meat are only cut from upper two-thirds choice Angus cattle from some of the highest quality brands in the industry. We are running a special on A. Thomas Portioned Center-Cut Strips so please give us a call and get your latest price on that cut. A. Thomas is grinding daily fresh Choice Beef, primarily Creekstone, into patties for us so we now stock 10, 8, 7 and 4-ounce patties.
Meats by Linz founded in 1963 in Chicago, custom cuts beef portions in both Prime and Upper 2/3rd Choice grades. They also offer one of the most impressive dry-aged programs in the country. The craftsmen who hand cut for Linz are the best in the industry. Their trim specs are so tight in fact that they exceed USDA standards. The only complaint we ever get is that they DO NOT LEAVE ENOUGH FAT ON THEIR CUTS. We are a little biased, but we think these are the best steaks that money can buy…period.
Check with your sales rep as we do have inventory on-hand in portioned beef. If you need special orders or special cuts, please let us know. We will be glad to stock at least a week’s worth of inventory in your favorite portions. We are also carrying primal cuts from both of these excellent companies, encompassing a selection of Angus products from high quality farms and processors. This is our first foray into a conventional Angus program that features the best of the best in branded beef, names that you know and trust and you will see them on the side of the box.
Speaking of Beef, Painted Hills seems to have gotten over the hurdles in terms of production. Unfortunately, their prices are up a good bit, but of course the whole beef market is up. In order to compete with the Chipotles and the Whole Foods of the world, Painted Hills was forced to raise their prices to their own partner growers in their program who were being romanced with large premiums on pricing for live cattle by those chains for their natural food programs. We could go on and on about the complexities of the current beef market but we won’t subject you to that. Anyway, we have Tenders, Strips, Ribeyes, a limited amount of Bone-in Standing Rib Roast, as well as all the traditional cuts that you have grown to love. We also have their All-natural, Fresh Ground Beef and their All-natural, Grass-fed Ground Beef which we introduced last week.
To kick off the program we are running a special on the All-natural, Grass-fed Ground Beef from Painted Hills at $3.99/lb. in a 20 lbs. case. In addition, we are featuring Hanging Tenders for $6.99/lb., which is a tremendous price for Painted Hills. We are also offering steak-ready Top Sirloin for $5.49/lb. for this week and next just to spur your interest and get you to try Painted Hills. Please order ahead on Ribeyes, and Export Ribs because we are sure to run out over the next ten days even though we brought in over a hundred cases of each.
For Kobe Style Wagyu Beef we have the All-natural, 100% American-grown Wagyu from Strube Ranch in Texas. We have limited amounts this week and more next week. We have a good selection of cuts but primarily what we have next week will be some Tenderloins, Strips and possibly Ribeyes on a pre-order basis along with steak-ready Sirloin and a good selection of Skirt Steaks and Briskets on-hand.
As far as Australian Beef we have a lot of Strips and Tenderloins on-hand with more expected next week.
VEAL FOR THE HOLIDAYS
The Veal market, which always spikes around Christmas and New Year’s, is even higher this year due to the same issues affecting the beef market which is high export demand coupled with reduced herd sizes and high grain prices. That said we do have a good selection of Marcho Farms Domestic, Amish-raised, milk-fed All-natural Veal as well as Grain-fed, Free-range Le Quebecois Canadian Veal. We have a good selection of all cuts from both companies with a lot of Osso Bucco in both options. We have a good supply of Grain Fed, Canadian 6-bone Veal Racks that produce beautiful loin chops. These would be a great special for your holiday menus. In addition, we are expecting Veal Hanging Tenders from Marcho Farms and we have a good selection of Sweetbreads on hand for New Year’s dinners.
For Le Quebecois, we have a great price on their Veal Top Round which is perfect for medallions and cutlets. We are also running a special on their Boneless Veal Breasts for a $1.99/lb. As you know, boneless veal breasts are a great item to slow-roasting and stuffing and we have a great price on this for the holiday.
WE HAVE A LITTLE LAMB
For Lamb we are now stocking a wide selection of Fresh Domestic Colorado Lamb as well as frozen New Zealand Lamb. We have the all the cuts including Frenched Racks, EZ Cut Shortloins,Tenders and a huge amount of Lamb Shanks coming in for the holidays at really good prices. Please check with your salesperson and get your orders in advance because they are sure to fly out of here.
LITTLE PIGGIES GO TO MARKET
For Eden Farms 100% Berkshire All –Natural Pork we have a big order coming in on Monday. We are very limited on Black Forest and Honey-glazed Hams so order all you can as soon as possible because we will probably be sold out by next week. Please let your salesperson know about your needs for the very popular 10-bone racks and other cuts like tenderloin and the pork sirloin from the Eden Farms All-natural, 100% Berkshire pigs from Iowa. We should have a good supply of pork butts. We are afraid that pork bellies may be a little limited due to high seasonal demand and increased bacon production. We will get some next week so customers who always use this product will get preference. Please call and try to reserve some. We also have a very convenient and value priced product for those of you who love the amazing apple-wood smoked bacon from Eden Farms. Everybody we know goes nuts for this bacon and we now are able to offer some special frozen end-cuts and value-cuts. These are the end trim slices that are the by-product of squaring off the slab bacon for foodservice and retail sliced product. They are fifteen pound cases and sell for only $3.99lb.
Not many people know that we carry a lot of other items including Italian Prosciutto di Parma, American Prosciutto by La Quercia and Spanish Serrano Hams. We also carry Harpers Hams out of Kentucky which make great Southern treats.
ALL SORTS OF BIRDS
In Fowl, we have a great selection of Sonoma Artisan Fresh Magret Breast which is a great holiday item. Seared and sliced magret breast is a great entrée item for this weekend and next. We have a good selection of Foie Gras coming in this week and next as well as a great supply of Smoked Duck Breasts and a limited supply of Pekin Leg Quarters and Drake Legs for confit and we also have rendered duck fat for that. We also carry Bell and Evans Pekin Ducks, Grimauld Farms Muscovy Duck and Jurgielewicz’s Pekin whole ducks and breasts.
South Carolina Squab and Poussin are pre-order items. Please let us know by Friday your needs for next week. They will come into us on Tuesday or Wednesday of the following week.
In addition, we are planning on bringing in a lot of Quail for the holidays so let us know your needs on all of our different Quail selections or any others items you may need in Georgia Grown quail.
Don’t forget about Springer Mountain Farms all-natural Georgia Grown chicken. There’s a reason why sales for this product line have grown at the rate they have. Springer produces the most flavorful, tender and juicy chicken that we have ever tasted. We are now receiving product 3 days a week to offer you optimum freshness and steady supply. It never hurts to pre-order quantity for your upcoming events so that we can assure that we have ample product available. This especially true for their sized 10-12 oz. Split Chicken Breasts and Springer Mountain Airline Breasts.
LOCAL RABBITS
We have a great selection of All-natural Rabbits this weekend, including a good selection of Louisiana frozen Rabbits from the same producer in Louisiana; Rabbit Man Farms.
SPECIALTY PRODUCTS AND OILS, MUSHROOMS, CHEESE, AND TRUFFLES
We always seem to sell out of holiday dips and spreads, so ask your salesperson for the different varieties that we will have.
Wild Mushrooms seem to be disappearing but we will have a good selection of domestically cultivated exotic Mushrooms as well as some last-of-the-season Chanterelles and Hedgehogs.
The big news is that we have our first shipment of Truffles! These black beauties are the first of the season and as always the price is high for New Years’ week. Call and reserve a few ounces of these amazing Truffles for this week or next; we are taking pre-orders.
We also want to remind you that we have a great selection of Black and White Truffle Oil from da Rosario as well as black and white Truffle Butter, black and white Truffle Mayonnaise, and even Truffle Honey to go along with our seven different kinds of Olive Oil from all over the world as well as some of our Nut Oils from France.
We have a superior White Balsamic Vinegar to make a wonderful salad or a syrupy reduction to drizzle over seared foie gras. We even have fresh Greek Olives on hand to make a wonderful New Year’s or Christmas salad.
