We seem to have a fair idea about what will happen with seafood and other proteins for this week and next leading into the New Year so we will give you a rundown.

                                                Florida and Gulf of Mexico Fish and Seafood

There should be some Amberjack showing up from the South Atlantic and the Keys.  Because of the influx of tourists in the Keys we think Local Yellow Tail Snapper as well as Stone Crabs will be expensive.  Stones are always tight for New Year’s Eve.

There will be a good supply of Fresh Florida Red Grouper coming in before the Holiday and right after Christmas for delivery next week.  Prices will probably remain constant.  Along with this, there will be some small amounts of Day-boat Black Grouper as well as a limited amount of Scamp landed but we expect to be forced to pay strong prices on these fish.

Gulf Red Snapper
will be coming in along with the Grouper as boats finish out the quota. We do not expect these to be less expensive than they have been running because this is the most popular fish from the south in the Northeast and end of the year demand will keep prices where they are if not cause a slight increase.  The good news is that it appears that we will be able to get some here for New Year’s celebrations.

We are expecting some good landings of domestic Tuna and Swordfish out of Leeville, Louisiana this weekend and early next week.  The prices will be competitive with imports and the quality will be A plus and you will be supporting our local Gulf fisherman.

In addition, we will also have some domestically caught by-catch like Escolar, Wahoo, Dolphin, Mako Shark and perhaps the first Gulf Bluefin of the season.  Please ask your salesperson about this every day as these fish are very limited.  As a backup Inland carries Frozen Sashimi Grade Escolar, Wahoo portions (at great prices) as well as Saku Blocks of Bluefin Toro for you.

We hope to have more Lake Pontchartrain Black Drum as well as the first of the season Giant Sheephead in this weekend from the Bayous of Louisiana.

                                                                Mid Coast Atlantic Seafood

From the mid-Atlantic, we will have some Wild Chesapeake Striped Bass; it will still be expensive in every size because the price never dropped this season. It is a wonderful fish and we should have a good shipment in this week and probably next.  Please let your sales person know now so we can set it aside for you upon arrival.

We may also see a little bit of Triggerfish, but that too will be very expensive.  We have a decent inventory of frozen Triggerfish fillet to insure you of availability and the prices are about half what fresh is running.

Mid Atlantic Fluke/Flounder
is going to be very plentiful and should be a great feature for everyone’s menu; prices should be moderate.  We believe this is the perfect seafood item to feature for the next 6-10 weeks. It is a great local day-boat fishery as well as a sustainable well managed fish that has made a remarkable recovery in the Mid –Atlantic and now all can share in this success story.  They come in Medium(1-2 lbs) Large(2-4 lbs)and Jumbo (4-8lbs). Prices increase depending on size with the jumbos being a great sub for Halibut.

                                                                   North Atlantic Seafood

North Atlantic fish will probably go up in price. We do have a little bit of Gooseberry Cod coming in from Cleanfish. It is a great item. We will also have a little bit of Wild Atlantic Cod but prices will be high. (Please remember that Fresh Alaskan Cod will start the first week of January at good prices).

Skatewing
and Haddock should be plentiful but prices will stay strong at about where they are now. It is important to pre-order Skate because we are sure to run out and we like to sell it within a day of arrival to give you the best quality!

We will have a good supply of FAS Wolfish as well.

Please let us know what your needs are for North Atlantic Scallops. We should be able to supply what you need as long as we have pre-orders. Nantucket Bays may be available depending on weather but we are sure these prices will be higher than this week.  Check with your salesperson and let us know what you will need because we do not want to speculate on these jewels.

Squid
is very scarce. Please give us your pre-orders for Rhode Island Squid so you won’t be disappointed. Most of the boats are not catching a lot at this point and are coming in for the holiday.

                                                    Imported Farmed Fish from the World

We are expecting a shipment this week from Norway of Farmed Halibut and some beautiful FAS (frozen at sea) Alaskan Halibut.

Farmed Salmon
from across the world looks to be more plentiful this week and next if the planes fly. We had some delays due to storms in Scotland and full airplanes this past week but those issues are now behind us.  Chilean flights have been full with produce and there was a jet fuel scare as well. These issues have subsided and we now have some shipments coming in.

We also have another shipment this week and next of Norwegian Salmon Trout which is the nicest Farmed Salmonoid available.  The meat is so full of fat that clever restaurants are taking the bellies and making bacon out of them!

We will have Farmed Atlantics from the Pacific NW, Chile and Scotland as well as some Norwegian Salmon fillets.

In addition, if want to walk on the wild side, we recommend that you look at our frozen IVP Wild Sockeye and King Salmon which were pin boned within hours of being caught!

There should be plenty of Farmed Redfish for the Holidays from Texas next week.

From Panama, we have ordered a lot of Farmed Cobia that is sushi grade.  Because of our buying power, we will be offering special deals on this through the first of the year beginning Thursday at a price that is too low to publish so call your Inland Sales rep.  This is an item to look at for a reasonable menu choice and we will be dropping our prices this week and next for the Holidays so call and find out about the most reasonably priced new farmed fish coming into the marketplace!

For other imported Farmed Fish, please let us know your needs for Farmed Turbot from Chile and Loup de Mer from Greece. We need to place orders by Thursday this week for next week delivery.  Product is more reasonable than last year because of the strength of the dollar but we must have pre-orders to make sure you have the product as these places will close for the holidays.

For freshwater items, Catfish is plentiful although the price is astronomical.

Rainbow Trout which has also gone up in price is tight from our local sources in the Carolinas but imports seem to be more available. Please let us know what you are going to need on imported Rainbows because supply seems to be a little dicey during the Holidays because of a reduced harvest schedule.

                                                    South and Central American Wild Fish

From Central and South America we should be fine with Grouper fillet from Mexico with stable prices through the New Year.

We could see some Yellowtail Snapper coming from Mexico, Honduras and Guatemala. Prices look to be very strong.

Mahi
will not be dropping in price but there should be a decent supply coming in from Central and South America. World-wide demand is huge and the frozen market is keeping the price higher and maybe even pushing it up.

From overseas, we should see some Tuna as well as a shipment of Itsumo Tuna from the Philippines.  Itsumo is always a good consistent natural super red color product to consider.

Dotted and Mutton Snapper
are questionable coming out of Central and South America and the price is way high.

In addition, items from Central and South America, like Corvina and Agria, seem more scarce than usual.

Wahoo, Trippletail
and Kingclip seem harder and harder to get.

                                                             Shellfish of all kinds

We think Lobster will inch up a little but they are pretty stable in price. It is still a lot cheaper than it was last year.  A great bargain this year is our own cold water nitrogen frozen Maine Lobster Tails.  We have every size from 3-4 ozs. to 12-14ozs. at super prices and we are MAKING DEALS ON QUANTITY PURCHASES! 

Our tails are vastly superior and taste better as well as easier to use than the Canadian product that is full of salty brine.  Plus you get more weight without the saltwater inside the tails.

Imported and Domestic Crabmeat
is going through the roof. Pasteurized is also very high this year.  Actually, our Maine Jumbo Lobster Lump is now cheaper than Blue Crab Jumbo Lump!  We also have a good inventory of the Jumbo Lobster Lump as a back-up in stock now.

We are bringing in as much Fresh Lobster Jumbo Lump as we can. We are also bringing in Fresh Picked Lobster Meat this week and next.

We should have all sizes of Lobsters but please let us know your pre-orders so we can order correctly.

Other shellfish like Clams and Mussels should be available but we will need to know what you will need in advance.

Another Christmas and New Year’s favorite is Florida Stone Crabs. We will have some limited amounts but they will be expensive.

We will be in good supply for Oysters, both Southern Gallons and Shell Stock. Again, you need to let us know what you will need, especially for West Coast Oysters. Thursday will be an absolute cut-off for West Coast Oyster as well as Manilla Clams and Med Mussels.

We should have some Laughing Bird and Rock Shrimp if you let us know far in advance.

We have lots of Woodsmoke Provisions Smoked Seafood in stock now. Please let us know if you will need some of the specialty flavors they produce. 

In addition, we have some Acme/Florida Smoked Salmon for $10.49 that is on special this week.  We also have some Ducktrap Smoked Salmon, smoked trout, smoked mussels, shrimp, and scallops, in stock for your parties and buffets. We also have smoked marlin, as well as, smoked sturgeon; which is a Holiday favorite.

Caviar
is in good supply. We have many different types including the locally raised and Sustainably Farmed UGA Caviar. Caviar is even down in price this year. Check with your sales rep for the types and availability as soon as possible on all our caviars.
